PUNJABI STYLE BUTTER CHICKEN MASALA

Butter chicken masala is a very famous chicken recipe which is prepared in fivestar hotels.Butter chicken masala is a gravy kind of dish which can be better had with butter naan.I will tell you the preparation method of it in Punjabi style.
INGREDIENTS
Chicken leg pieces-1/2 kg
Salt
Kashmiri chilli powder-2 teaspoons
Gram flour-1/2 teaspoon
Kasuri methi-1/2 teaspoon
Lemon-1/2
Capsicum-1/2
Tomato sauce-2 teaspoons(optional)
Ginger garlic paste-1/2 teaspoon
Oil
vinegar-1/2 teaspoon
Onion-1
Tomato-3(big size)
dry chillies-5
Coriander seeds-1/2 teaspoon
Cardamom-1
cinnamon-small piece
Green chili-2
Cloves-6
Butter
Cream
Chat masala*-1/2 teaspoon
Hung curd-3 teaspoons
PROCESS
MARINATION
  In a pan take chicken pieces and make slight marks with a knife.Add salt,kashmiri chilli powder 1 teaspoon,garam masala,kasuri methi 1/4 tea spoon,lemon juice,hung curd,ginger garlic paste 1/4 teaspoon,oil 2 teaspoons,vinegar,chat masala,gram flour and mix well
    Leave it to marinate for about 30 minutes
PREPARING PUREE
In a pan,pour 2 glasses of water and add chopped onion,capsicum pieces,dry chillies,tomato slices,coriander seeds,cardamom,cinnamon,cloves and boil well.
After it gets cool,grind it well in a mixer.Strain the mixture and use only the strained puree.
FRYING
  After marination,chicken can be fried in a microwave oven in grill mode for 15 minutes.If we don't have a oven at home,we can fry it with some butter in a pan for 15 minute
Take another pan and put some butter and add kashmiri chilli powder 1 teaspoon,kasuri methi 1/4 teaspoon,cream 4 teaspoons,salt.After frying them add the already prepared puree to it and put the chicken pieces.Finally 2 teaspoons tomato sauce must be added.Fry the mixture well for 15 minutes on low flame.
                    Yummy,delicious PUNJABI STYLE BUTTER MASALA is now ready.
*If kashmiri chilli powder is not available,we can use chilli powder and a pinch of colour.
*Hung curd can be prepared by straining off the water present in curd with a cloth.

GARLIC ALOO FRY

Aloo/potato is has huge amounts of phosphorus in it.It is 100% fat free and  cholesterol free.It's good for people those who are on diet.Garlic is proven to reduce blood pressure.The combination of these too would not only make a healthy dish but also a tasty delicious dish.Garlic aloo fry is simple quick recipe and good for health.
INGREDIENTS
1.Aloo/potato-1/2 kg
2.Oil-4 table spoon
3.full Garlic -1
4.Salt
5.Red chilli powder-2 tea spoons
PROCESS
1.Cut the potatoes into pieces with a vegetable cutter
2.Wash them well and fry the potatoes in oil
3.After 5 minutes,add lightly smashed garlic pieces to it
4.When you feel that potatoes are cooked i.e they are soft,add salt and red chilli powder
5.Here I have used two spoons,if you wish to have it more spicy you can have more.
6.Keep the flame in low  and roast well until potato gets cooked.
   The special flavour that adds taste is garlic because garlic when mixed with potato gives unique taste.It takes not more than 10 minutes to prepare this recipe.This could be the best dish to be prepared by bachelors because of it's simple ingredients and time.

TOMATO PACHADI/CHUTNEY

Tomato pachadi/chutney is very famous in Andhra Pradesh especially in regions of Rayalaseema.It's very easy and simple recipe.It can be best served with rice and ghee.Going to the ingredients
REd Tomatoes-1/4 kg
Oil
Mustard seeds-1/2 tea spoon
Fenugreek(menthulu)-1/4 tea spoon
Urad dal-1/2 tea spoon
Green chillies-2
Dry chillies-5
Tamarind (optional)-pinch
Garlic pieces-3
Chopped Onions
Coriander
Turmeric
PREPARATION STEPS
1.In a pan add oil and fry mustard seeds,fenugreek seeds,urad dal,green chillies and dry chillies
2.Take this into a mixer and add garlic,grind the mixture well
3.In the same pan,add some more oil and fry tomato slices,salt and a pinch turmeric
4.After frying the tomatoes add coriander and blend it in mixer.Do not over grind tomatoes.
5.Mix the tomato paste with the already grinded powder
6.Add chopped onions directly without frying. 
             TOMATO PACHADI is now ready to be served with plain rice and ghee

5 star hotel recipe MUTTON ROAST

Mutton Roast is the most famous five star hotel dish.To go to a hotel and have this dish it costs more.So,here I am telling you the easy method to prepare MUTTON ROAST WITHOUT OVEN at home.It's basically a dry item.It takes around 30 minutes for marination and 15 minutes for preparation.
INGREDIENTS
Mutton-1/4 kg
Salt
Chilli Powder-1 tea spoon
Garam masala-1 tea spoon
 Coriander powder-1/2 tea spoon
Ginger garlic paste-2 tea spoons
Onion-1
Green chilli-2
Tomato-2
Dry coconut powder-2 tea spoon
CAshew nuts
Curry leaves
Pepper-1/2 tea spoon
PROCESS
1.In a bowl add mutton pieces,salt,red chilli powder,coriander powder,ginger garlic paste,chopped onions,green chillies,tomato pieces and 1/2 tea spoon garam masala.
2.Mix it well and leave it for marination for 30 minutes to 1 hour
3.After marination transfer this mixture in a cooker and add 1/2 cup water
4.Boil it well
5.In a pan,put some oil and fry the boiled mixture.
6.Add dry coconut powder and fry well
7.From the top add 1/2 tea spoon garam masala and 1/2 tea spoon pepper powder and put off the stove
8.Garnish the dish with fried cashew nuts and fried curry leaves.
   Now delicious five star hotel special MUTTON ROAST is ready.Hope you like it.

PALAK EGG BHURJI

Today I have come up with a easy and healthy dish,Palak(spinach) egg bhurji.Spinach/Palak has huge amounts of Vitamin A & K in it.It is a very good source of dietary fibre.Egg has high protein level in it.Both spinach and eggs enhance vision.This a good combination to be served to children.INGREDIENTS
1.Eggs-4
2.Onions-1
3.Green chilli-2
4.Salt
5.coriander powder
6.Coriander
7.Oil
8.PAlak/spinach
STEPS
1.In a pan fry chopped onions and green chillies  with some oil
2.Now add chopped spinach and salt and fry.
3.Now break the eggs and put them into the pan
4.From the top sprinkle coriander powder and fry
5.Serve the dish with coriander. This recipe can be prepared without adding palak also and can be made as simple as egg bhurji

Karnataka special BISI BELEBATH

Karnataka is very famous for it's breakfasts.Many varieties of breakfasts are prepared.And one best among them is BISIBELEBATH.In Kannada,BISI means hot,BELE means dal.So,it's obvious that bisibelebath is made with dal.Let me tell you the ingredients first.
Preparation time-15 min
Serves-3-4
INGREDIENTS
Rice-1 cup
Toor dal-1 cup
Tomatoes-2
Onion-1
Salt
 Tamarind
Curry leaves
CAshew nuts
Asafoetida
Mustard
Ghee
Carrot(optional)
Peas(optional)
Beans
Oil
Dry chilli
Bisi belebath powdeR
 Process
1.In a cooker,add rice,dal,onion pieces,tomato pieces,carrot,peas,beans,water 3.5 cups.
2.Boil it until we get 1 whistle
3.In the  same cooker,now add bisibelebath powder,water(1-1.5 cup),tamarind juice and boil for 5 min
4.In a other pan fry Curry leaves,CAshew nuts,Asafoetida,Mustard,dry chilli
5.Add this to the cooker and off the stove.
              Take bisibelebath into a plate and from the top add kara boondi or chips.

Pongal with Coconut chutney

Today I shall teach you how to make a breakfast.It's PONGAL CHUTNTEY.But this chutney
is famous chutney from Karnataka.It's Karnataka special Coconut chutney.Let us see the
ingredients seperately.
PONGAL
1.Rice-1 cup
Moong dal-1/2 cup
Jeera-1/2 tea spoon
blakc pepper--1/2 tea spoon
Curry leaves
Asafoetida-pinch
salt
Cashew
ginger
ghee
Salt
Turmeric(optional)
Green chilli(optional)
Process
1.Lightly fry moongdal without oil
2.Clean moongdal and rice with water.
3.Put moongdal and rice ,add 5 cups of water for 1 cup of rice in cooker
4.Add salt and a pinch of turmeric to it.Wait untill we get 2-3 whistles
5.In a pan add some ghee and fry jeera,black pepper,curry leaves,ginger(little),green chilli(1).
6.Add this to the pongal and mix well.
    This pongal will not be spicy because we have not added chilli.Pongal is best had with Coconut chutney.
So let's it's procedure.

Steps
1.Take a pan and fry ground nuts  and chillies lightly

2.In mixer, add coconut pieces,ground nuts,roasted chana dal,chillies, tamarind, salt and grind well
3.Add coriander and blend it in mixer
4.In apan take some oil and fry curry leaves,mustard and add it to mixture
  Now tasty pongal with coconut chutney is ready to serve hot

Special Veg Pizza

Good evening everyone.My son always used to like pizzas,burgers at restaurants.Not only my son most of the kids and teenagers today love fast foods at restaurant.So today I want to help you make PIZZA at home.I guess this post would  solve most of the mother's problem.Going into ingredients
1.Pizza base
2.Capsicum
3.Tomato
4.Onions
5.Pepper
6.Salt
7.Snapin Oregano, 25g
8.Tomato sauce
9.Amul Cheese - Cubes, 200g Pack 10.Butter
11.Oil

Preparation steps
1.Cut onions,tomatoes,capsicum cubes shape
2.Pour some oil and lightly fry onion,tomato,capsicum cubes
3.Add some pepper,oregano,salt to it
4.Boil 2 tomatoes and then grind them well.This is called tomato puri
5.In a pan put some oil,add small pieces of onion,capsicum,oregano,salt,pepper and fry well
6.To the same mixture add tomato puri and mix well
7.After putting the stove off add some tomato sauce to it.
8.Take a pizza base which can be bought from any super market and apply a layer of this mixture on it.Pizza base will be usually available in round shape.but here I have used a oval one.
9.On the top add already fried vegetables.Spread the
Amul Cheese - Cubes, 200g Pack 10.This pizza can be directly heated on pan with some butter.
11.CLose the pan with a lid so that the cheese melts well.
 12. Off the gas after 4-6 minutes
                  Tasty cheesy veg pizza is now ready.This can be served as morning breakfast or evening snacks.Now your kids will never take the name of restaurants:)

Banglore mallige IDLI with SAMBAR

Most commonly prepared breakfast is IDLI.But,its difficult to make it soft.Here
I am giving you easy recipe for preparing idli.This is special Bengaluru Mallige
Idli.
INGREDIENTS
Rice boiled(uppudubiyyam)-3cups
Rice-1cup
Urad dal (uddipappu)--1 cup
Fenu greek seeds(menthulu)-1/2 tea spoon
Rice flakes(atukulu)-3/4 cup
boiled rice-1/2 cup
Steps of Preparation
1.Add rice boiled,rice,urad dal,fenugreek seeds,rice flakes in a bowl
2.Add some water to it and leave it overnight or atleast for 6 hours.
3.After that add boiled rice
4.Now grind the mixture well
5.This paste can be used for making idlis and dosa too
6.Before making idlis add some salt and baking soda to the paste.
 The best combination to have with idli is sambar.So lets see how to prepare it

Tomato-2
Dry chillies
REd gram-1 cup
Sambar powder-2 1/2 tea spoon
salt
Tamarind
Jeera
Asafoetida(inguva)
Curry leaves
Mustard
Oil
Onion-1/2
Steps
1.Boil red gram,onion,tomato and paste them well'
2.In a pan put the paste,add some sambar powder,salt,tamarind juice
3.Add some water and boil it well
4.In other pan pour some oil and fry mustard,Asafoetida,,jeera,curry leaves and drychillies.
5.Add this to sambar only after turning off the gas.

Tasty easy Omelette Burger

This is a easy and quick recipe.Children like this burger more.Egg gives more proteins and strength to kids.Omelette Burger is tasty,easy,nutritious recipe.
INGREDIENTS
1.Bun-2
2.Eggs-2
3.Mayonnaise
4.Tomato sauce
5.Capsicum-1
6.Onion-1
7.Butter
8.Salt
9.Chilli powder
PREPARATION STEPS
1.Cut the bun into two halves and lightly fry it with butter
2.On a pan,put some oil and break the egg on the pan
3.From the top sprinkle salt and chilli powder,you can even add pepper powder
4.Fry the omelette on both sides.
5.Apply mayonnaise on one half of the bun and tomato sauce on other half.
6.Keep capsicum and onions cut in the shape of rings on the bun
7.Put the omelette in between two bun halves.
8.Tasty omelette burger is now ready.

HITIKINA BELE SARU/ PITIKINA BYALLA CHARU

HITIKINA BELE SARU,It's a traditional dish of Karnataka.In most of the parts of Karnataka this curry is prepared on the occasion of SANKRANTHI.It tastes good with Dosa and rice.In Andhra Pradesh its called PITIKINA BYALLA CHARU
Ingredients
Cinnamon
Cloves 6-7
lightly fried onions 1
garlic 1
ginger
coriander
coconut 1/4
coriander powder 1 tea spoon
broad beans 1kg
red chili powder 1/2 tea spoon
turmeric 1/4 tea spoon
tomato 1
STEPS
1.Grind and paste all the items except tomato and coriander.
2.Put some oil in the pan and add the paste to it
3.Fry the paste until it loses its raw smell
4.Add some water and let it boil
5.Now add the broad beans to it and boil it for some time
6.Now add tomato slices,salt and coriander and boil.
 HITIKINA BELE SARU is now ready and can be had with dosa or rice.






Sankranthi special PONGAL

HAPPY MAKARA SANKRANTHI.Today is a  very special festival.And everyone prepare Sankranthi special PONGAL sweet.So today I'll tell you how to prepare it.This dish is favourite one for my son.




Let us see the ingredients first
Moong Dal-1/4 cup
Jaggery-2 cups
ghee
cashew nuts
kismis
Rice-1 cup
Water
Milk 1/2 cup(optional)
Coconut(optional)
Preparation Steps
Lightliy fry the moongdal in a pan with some ghee.Now put this moong dal and rice
into a cooker and add 3 cups of water.Allow it to boil until you get 3 whistles.
In another pan take jaggery and add some water.Boil it until the jaggery melts.
Mix this jaggery to the rice and moong dal.For additional taste we can add 1/2 cup milk.
Add coconut pieces to it.Now we can fry cashews and kismis in ghee 
and add it to the mixture.

Tasty tasty Sankranthi special PONGAL is ready to serve.

Thotakura talimpu/Amaranth leaves fry

Thotakura Talimpu/Vepudu or Amaranth leaves fry
    Today let's prepare something delicious and healthy.I selected thotakura/amaranth leaves.It helps in enhancing digestion and reduces cholesterol levels in body.It'svery good for people suffering from diabetes.
INGREDIENTS
Thotakura-2

Garlic-4
Onions-1 small
Red chilli powder-2
Green chilli-2
Oil
Mustard seeds
Jeera
Moong dal
Coriander powder
STEPS
1.Add some oil to the pan.
2.Add mustard,jeera,onion,garlic,chillies,moong dal,thotakura,salt
3.Let it boil ,leave it for 5 min
4.Mix it well and add coariander powder and red chilli powder .
5.Finally healthy thotakura fry is ready to serve. 

CHARCOAL CHICKEN

On the day of boghi everyone of us prepare non vegeterian food at home.So today let us prepare a chicken item,CHARCOAL CHICKEN.YUP!IT'S CHARCOAL.
Let me first tell you the ingredients,it' so simple
Chicken leg/wing piece-1/2 kg
Yogurt-1 1/2 cup
Sugar-pinch
Salt
Butter-50gm
Badige chilli(Badige is name of a place in karnataka.If badige chilli is not available you can use dry chilli)
Garlic-5 pieces
Tomato sauce-1 teaspoon
Cream-1 1/2 spoon
Ghee-3 spoons
Colour
Coal
PREPARATION STEPS
1.Take chicken pieces in a bowl and add yogurt,salt,sugar,butter,badige chilli,garlic,tomato sauce,cream,ghee,colour and mix them well and marinate it for 1 hour.

2.Boil the mixture directly on stove in high flame.Do not add any oil or water because we have already added yogurt and butter
3.Now heat the coal and place it on chicken mixture.Close it with bowl with pours for 3-5 min

4.Remove the coal pieces carefully.

 Yummy,tasty CHARCOAL CHICKEN is now ready to serve.We can have it with rice or directly as a side dish.Hope you like this reciepe.

Hi everyone,HAPPY BOGHI.I guess everyone is having great time feeling the warmth of boghi fire.My kids are enjoying flying kites.
        I know you are confused which sweet to prepare on boghi.So,here I am with a delicious sweet of Karnataka,COCONUT POLI/COCONUT OBBAT.There are different ways of preparing it.But here I will tell you the easy and fast method.

Here are the ingredients required for it.
Ingredients for Dough
Maida/all purpose flour -3cup
Salt -3/4 tea spoon
Oil-3 tea spoon
Ingredients for Stuffing/Poorna
Grated coconut-3 cup
Jaggery-2.5 cup
Cardamom-4
Water-1 cup
White sesame seeds-6 tea spoons
    *Preparation time-45 min
Steps of Preparation
DOUGH
1.Take a bowl and add  3 cups of maida.In some parts of karnataka,people add some ravva to maida.But to make it not more complicated we have taken only maida.
2.Add 3/4 tea spoon salt to it and mix it well with required amount of water.
3.Water should be added until we get right consistency as shown in below photograph.This mixture will be smoother than chapathi dough.
4.From the top add 3 tea spoons of oil and keep the dough aside.
STUFFING/POORNA
1.Take a pan and add 2.5 cups of jaggery  and a cup of  water to it.Allow it to bol on medium flame until all the jaggery melts.
2.Add 3 cups of grated coconut and 4-5 cardamoms to it and make a mixture.

3.To make the mixture more tastier add,5-6 tea spoons of white sesame seeds.
4.Take a small dumpling of dough and make a small poori.
5.Put small balls of stuffing inside it.
6.Press poli with finger tips  on a banana leaf or plastic cover to make it into a round shape.
7.Heat the papn on high flame ,add few drops of oil on it and cook poli on both sides.
      Now the tasty poli is ready to serve hot with ghee..

Welcome to rekhasyummykitchen

Hi everyone,
This is Rekha Teja.This is my first post on this blog.My idea to start a blog was because of my daughter Vibha.
Bascically I am native of Karnataka.My schooling,college went on in Karnataka.Karnataka is very famous for its wide varieties of breakfasts items among which Bisi belebath occupies first place.
.I was married to a central government employee.Because of his work I travelled most of the parts of Southern India.I lived in Goa where I got to taste and learn differentvarities of fishes.Goa is a beautiful place to live.Tourists from all over world come there to enjoy its natural beauty.From there we travelled to Andhra Pradesh.We have been here for almost 15 years.The Rayalaseema part of Andhra Pradesh is very famous for its spiciness in almost all dishes.The different varieties of chutnies are prepared by natives of this state.
Being a house wife,I had most of the time to spend in kitchen.I  experiment breakfasts of Karnataka,chutnies of Andhra Pradesh,fish varieties of Goa,add spiciness of Rayalaseema.But as other kids,my children also wanted Chinese and fast food.I don't  wanted my children to have unhealthy food at hotels.Then I started learning those dishes too.
This is my life.I have two beautiful children and a understanding man as my husband.And finally
This blog is for mothers like me who wanted to give their kids healthy and tasty food at home and teenagers like my daughter who want to learn cooking just for fun.I hope you people enjoy my dishes of different varities and different states.
