MANGLORE BUTTER DOSA WITH ANDHRA KARAM

Good morning everyone.I have come up with a very familiar dish to you that is DOSA.All of us know how to prepare dosa.Have you ever noticed the difference between the dosa prepared at home and a hotel.The one prepared at a hotel will be so crispy and red in colour.Now I want to help you make a dosa which tastes better than the one at a hotel.MANGLORE BUTTER DOSA.manglore is a place in Karnatka which is birth place of this butter dosa.The good combo to have with it is Andhra style Karam.Let's see how we gonna prepare it
INGREDIENTS FOR DOSA
Boiled rice-2 glasses
Raw rice-2 glasses
Urad dal-1 glass
Moong dal-1 tea spoon
Fenu greek seeds-1 tea spoon
Red gram-1 tea spoon
Flattened rice-5 tea spoons
Water-1 1/2 litre
Bengal gram-
PROCESS
1.Take all the ingredients in a big bowl and add water
2.Leave   it for 6 hours 
3.Grind the mixture well
4.Allow the mixture to settle for whole night
5.Next day morning add required amount of salt,soda,2 spoon maida,1/2 spoon sugar an dmix well
6.Adding sugar gives dosa a nice dark red colour and maida gives crispiness.
7.This mixture can be used asusual to make dosa but instead of oil apply butter
INGREDIENTS FOR ANDHRA KARAM
Onion(big sized)-1
Tomato(medium sized)-1
Garlic cloves-2
Salt
Oil
Curry leaves
Mustard seeds
PROCESS
1.Grind chopped onion,tomato slices and garlic cloves,salt well
2.In a pan,take some oil and fry mustard seeds,curry leaves
3.Add the paste to it and fry for 3-4 minutes
*You can apply this karam on one side of dosa while preapring it
