PESARATTU WITH ALLAM CHUTNEY

PESARATTU WITH ALLAM CHUTNEY
INGREDIENTS
1.       Green gram-1 glass/1/4 kg
2.       2tsp- rice
3.       1tsp Urad  dal
4.       Green chilli-3
5.       Jeera-1tsp
6.       Ginger-1inch
7.       Salt
Process
·         Put green gram,rice and urad dal in a bowl and soak them in water for whole night
·         In the morning grind them all with green chilli,jeera ,ginger and salt
·         Add soda before putting pesarautu
              ALLAM CHUTNEY
·         Ginger-50gm
·         Tomato-1
·         Green chilii-3 to4
·         Jeera-1/2
·        Mustard seeds-1/2
·         Fenu greekseeds-1/4
·         Salt
·         Tamarind-lemon sized
·         Jaggery-lemon sized
·         Oil
·     In a small pan,fry mustard seeds and  curry leaves in oil and keep aside
·         Slice ginger into pieces and fry in oil and keep this also aside
·         In the same pan, fry mustard seeds,jeera and fenugreek seeds
·         To the same pan,add chillies and fry,later add tomato slices
·         Fry them well and off  the stove
·         Grind all the fried ingredients along with jaggery and salt and make a paste

·      Mix it with the already fried mustard seeds  and curry leaves.  Garnish with coriander

BOMBAY STYLE PAV BHAJI


Pav Bhaji is the best and tastiest Street Food of Mumbai.It's a good snack item for children.We need not go to a restaurant to taste it. It can be prepared easily at home.Here  it is how
INGREDIENTS
·     *    Pav/bun-2
·         Onions-1
·         Chopped Tomato-1
·         Tomatos for puree-2
·         Potatoes-1
·         Pav bhaji masala-3 tsp
·         Lemon-1/2
·         Garam masla-1/2 tsp
·         Boiled peas,carrot,cauliflower,beans-1 cup
·         Butter
·         Badigi mirchi/dry chilli-10
·         Garlic-6 to 7 cloves
PROCESS
·         Grind chillies and garlic and make a paste
·         Boil 2 tomatoes ,peel them and grind well to make tomato puree
·         In a pan,put some butter and  fry the garlic chilli paste  for 2-3 min
·      Add   Finely chopped onion
·  After frying onions,add,  Tomato and fry on high flame
·  Now  add tomato puree
·         Fry them well
·       Now  add boiled aloo paste,garam masala,pav bhaji masala,vegetables ,salt and smash well
·         Add coriander,butter and lemon and keep it aside
· Now , Cut the pav bh
aji buns in the middle
and light roast on both sides with butter
Now HOT PAV BAJI can be served with lemon and onions.
*PAV is square shaped bun which will be available in all supermarkets.If it is not available we
can use normal buns too

MUMBAI STREET FOOD TOMATO TAWA RICE

INGREDIENTS
1.       Cooked rice-1 bowl
2.       Oil
3.       Jeera -1/2 tsp
4.       Onion-1 medium sized
5.       Red chili-3 to 4
6.       Garlic -4 cloves
7.       Capsicum-1/2
8.       Tomatoes-2 medium sized
9.       Salt
10.   Coriander
11.   Mint leaves
12.   Curd -1/4 cup
13.   Pav baji masala-optional-1/2 tsp
14.   Green peas
PROCESS
·         Take some oil in a pan, fry jeera, onion slices
·         To the same pan add,redchilli and garlic powder
·         Fry the mixture for 3 minutes
·         Add the finely chopped tomatoes,greenpeas,salt and fry well for 5 minutes
·         Now add capsicum pieces followed by curd
·         Add the cooked rice to the pan and fry
·         Finally add pav baji masala, coriander leaves and mint leaves


 Mix well and finaally our favorite MUMBAI STREET FOOD TOMATO TAWA RICE is ready.

METHI ALOO


INGREDIENTS
1.       Potatoes cut in cube shape-1 cup
2.       Onion-1 cup
3.       Garlic –6 cloves
4.       Ginger-1  ½ inch
5.        chili-2
6.       Coriander  powder-1 tsp
7.       Turmeric-1/4 tsp
8.       Chilli powder-1/2 tsp
9.       Chopped Methi /fenugreek leaves-1/2cup
10.   Oil
11.   Salt
PROCESS
·         Take 2 tsp of oil in a kadai
·         Fry the potatoes cut in the shape of cubes
·         When the aloo gets half cooked add finely chopped methi
·         In a mixer jar,take  onions, Garlic, ginger ,chilii  and make a rough paste
·         Put this paste to the pan once the methi and aloo are fried well
·         Allow the mixture to fry for at least 5 minutes
·         Add coriander powder,turmeric,chilli powder and fry
·         Do not use water
 This is a very simple recipe but tastes soooo good.You can try it easily.A combo of methi and aloo 
tastes very good.You know Methi leaves have many health benefits.It reduces blood cholesterol level,aids digestion,reduces risk of heart strokes.
So why do late?Go and start preparing it for your loved ones.

VEG BURGER

Hi everyone!Being a mother,I know the problems we have for making evening snacks to our kids.Children get tired as they come from school in the evening.But only a cup of milk will not do everything.We need to prepare some snacks to fill their empty tummies.So here I am giving you the preparation method of Kids' all time favorite VEG BURGER.Here are the ingredients
INGREDIENTS
Boiled aloo-1/4kg
1.       Green chilli-4to5
2.       Coriander
3.       Salt
4.       Pepper powder-1/2tsp
5.       Green peas
6.       Corn flour-5tsp
7.       Buns
8.       Mayonnaise
9.       Tomato sauce
10.   Tomato slices
11.   Onion
12.   Capsicum
13.   Cucumber
      14.Maida-2tsp                          
Process
·         Boil the potatoes and green peas
·         Peel the potatoes and grate it
·         Smash grated aloo and green peas
·         Add chopped green chillies, chopped coriander, pepper powder, corn flour and mix well
·         Take some paste and make small balls
·         Press them gently with hand to make a small round like puri
·         Gently pat the cutlets in Maida
·         Now take some oil in pan and deep fry them
·         Keep the cutlet aside
·         Cut the bun into two halves
·         On one half apply mayonnaise and on other apply tomato sauce
·         Place tomato slices, onion slice, cucumber slice on one half of the bun
·         Place the burger on it and close it with other half of the bun
·         Tasty delicious veg  burger is ready.Serve it with tomato ketchup and mayyonaise

CHAPALA PULUSU/FISH CURRY

Good morning everyone.
What are your plans for today?Today is sunday so I guess everyone will be preparing Non vegetarian items at home.But you know of all the vegetables and also non vegetarian items FISH is the healthiest.It is a rich source of Vitamin D.It's world's best source of Omega 3 fatty acids.Omega 3 fatty acids have many health benefits.It lowers the risk of heart stroke,it helps and prevent depression.So let us prepare this tasty and healthy fish curry today
INGREDIENTS
1.       Fish-1/2 kg
2.       Onion-1 medium
3.       Garlic-1 small
4.       Dry coconut powder-3 tsp
5.       Fried Ground nuts-1 tsp
6.       Cloves-6 to 7
7.       Coriander powder-1 ½ tsp
8.       Chilli powder- 1 ½ tsp
9.       Turmeric-1/2 tsp
10.   Fish curry masala powder-1 tsp
11.   Coriander
12.   Tamarind-small egg sized
PROCESS
·         Take a mixer jar and put garlic,coconut powder,fried ground nuts,cloves,coriander powder ,chilli powder,turmeric,onions
·         Paste them well
·         Take some oil in a kadai and add the already grinded paste
·         Do not  fry the masala
·         Immediately add 3 glasses of water
·         Boil it  for approximately 10 minutes until the raw smell goes off
·          Put the cleaned fish pieces,salt,tamarind juice
·         Boil it for maximum of 6 minutes
·         Finally add fish curry powder and coriander from the top

PUNJABI ALOO PAROTA

INGREDIENTS
Boiled aloo-1/2 kg
Greeen chilli-7
Salt
Garam masala 1 tea spoon
Chat masala 1 tspn
Coriannder
Onions chopped finely-1big
Garlic- 4 cloves
Chilli powder-1tspn
Grated ginger
INGREDIENTS FOR CHAPATI
Wheat flour 1/4 kg
Maida 1/4kg
Salt
Oil
PROCESS
1.Take few potatoes and boil potatoes with some salt in pressure cooker
2.Peel the aloo and grate them once they become cool to touch
3.Add all the above mentioned ingredients to aloo
4.Smash the masala well and mix
5.In a bowl,take wheat flour ,maida ,salt, 2tsp oil and required amount of water and mix well
6.Divide the dough into small equal portions and roll a portion of dough into a circle
7.Place same sized stuffing in the centre of the circle
7.Bring together all the sides in the centre and seal tightly
8.Roll again into a bigger circle with a little flour
9.Heat the nonstick tava and cook the parota with some butter until golden brown spots appeaar on both the sides
Aloo Parota is now ready
Better served with panner muttor masala or with dahi.

GUTTHA KAKARA KAYA/NUNE KAKARA KAYA

Bitter gourd is most neglected food among large part of population.It is energy and immune boosting food if consu,ed on a regular basis.It will remove the impurities/toxins from Liver.Bitter gourd also has beauty effects where it purifies the blood system and gives natural glowing skin free from acne.But most of us neglect it because of it's bitterness.So here I give a bitter gourd recipe which will be almost free from bitterness and tastes extremely delicious
INGREDIENTS
1. Kakara kaya/bitter gourd-1/4 kg
2. Onion-1 medium
3. Garlic-1 small
4.  Oil
5. Salt
6. Cloves-6 to7
7. Fried Ground nuts-2 tsp
8. Coriander powder-3/4 tsp
9. Chilli powder-3/4 tsp
10.Turmeric-1/4 tsp
11.Dry coconut powder-optional-2 tsp
12  Tamarind-lemon sized
PROCESS
·         Take some oil in a pan and saute the onions until it gets golden brown
·         In a mixer jar,take coriander powder,chilli powder,turmeric,tamarind,fried onions,garlic,cloves,salt and grind  well
·         Make scars on the bitter guard on four sides and half boil them with salt and turmeric
·         This will remove the bitterness from the bitter gourd
·         Strain the water from bitter gourd and stuff the already prepared masala
·         Now take some oil in the pan and fry the stuffed bitter gourds
·         Fry them in low flame for about 20 minutes until it becomes  semi gravy

RAW BANANA FRY


INGREDIENTS
1.Raw banana
2. Coriander
3.  Curry leves
4.  Mustard seeds
5. Jeera
6.  Oil
7. Salt
8.  Chillies
9.  Onions
10. Urad dal
PROCESS
·         First take the bananas and peel them
·         Slit into two halves and boil them jsut like aloo
·         Take some oil in a pan and saute mustard seeds,jeera,urad dal
·         Then fry chillies,chopped onions and curry leaves
·         Add salt to taste
·         Now add the lightly  smashed banana into the pan and fry

·         Garnish the dish with coriander

HOTEL STYLE ANDHRA PALAK PAPPU/SPINACH DAL


INGREDIENTS
1.       Palak/spinach
2.      Red gram -1cup
3.       Onion-1 medium
4.       Chillies-4 to5
5.       Ginger garlic paste-1/4 tsp
6.       Mustard seeds
7.       Jeera
8.       curry leaves
9.       Dry chillies
10.   Tamarind-small lemon sized
11.   Tomato-2 medium
12.   Red chilli powder-1/2 tsp
13.   Turmeric -1/4 tsp
14.   Oil
PROCESS
·         Take some oil in cooker and fry onions,green chillies
·         After the onions turn golden brown add ginger garlic paste
·         Now put the red gram and saute
·         Later add chopped spinach and fry well
·         Add the chopped tomatoes and immediately add 2 glasses of water
·         Add salt,turmeric,chilli powder,tamarind
·         Close the cooker with a lid and boil until we get 3 whistles
·         Take some oil in a kadai and fry mustard jeera,crushed garlic,dry chilli,curry leaves
·         Once the dal in the cooker gets ready add this mixture to it and stir

BENGALI SWEET RASMALAI


INGREDIENTS
1  Full fat Milk -1 ½ litre
2.  Sugar -1 cup
3.  Almod
4.  Lemon-few drops
5.  Maida -2 tsp
6.  Saffron strands
7. Milk maid
PROCESS
·         Take 1 litre of milk in a bowl and boil until it becomes ½ litre
·         After that add sweet kova or milk maid
·         In another bowl ,take ½ litre of milk and boil well
·         After the mlik boils,add few droops of lemon
·         The milk will now become panner
·         Strain this panner well so that all the water drains off
·         Allow panner to cool for sometime
·         Mix maida with panner to form a paste
·         Take small amount of the mixture and make a very small size puri
·         Now take another pan and pour 3 cups of water
·         Add the sugar and make it as a syrup
·         Put the already prepared puri to the syrup and boil them in it for 10 minutes
·         Take the puris out and directly put them into already prepared milk, milkmaid mix
·         Add saffron and chopped almonds from the top
·         Rasmalai is now ready but it tastes well when it is cool.so keep the rasmalai in refridgerator for sometime
