BRINJAL CHUTNEY

I wanna help you learn a simple and easy chutney now.This is a perfect dish for bachelors because it takes very less time to prepare and tastes very delicious.
INGREDIENTS
  • Brinjals-4
  • Green chillies-3
  • Tomatoes-2(medium sized)
  • Tamarind-lemon sized
  • Salt
  • Garlic cloves-3
  • Coriander leaves
  • Jeera-1/2
  • onions chopped
PROCEDURE
  1. Wash brinjals and apply oil on them
  2. Make small slits on the top
  3. Keep them directly on gas stove and fry
  4. After the brinjals get fried,remove the peel
  5. Take a pan,add some oil and fry chillies and tomatoes
  6. Grind garlic cloves,salt,jeera,tamarind and powder well
  7. In the same mixer jar,add brinjals,chillies,tomatoes and inch(grind lightly) them
  8. Now add coriander leaves and inch again
  9. Take this chutney into a bowl and add chopped onions to it
      Tasty,easy BRINJAL CHUTNEY is now ready.Served better with white rice and ghee..

COCONUT BARFI/KOBBARI MITTAI

Today I wanna teach you all asweet.It is all time favorite for all and especially kids,KOBBARI MITTAI.This sweet  makes us everyone remember our childhood.We in our childhood used to eat this sweet from a nearby kirana store.
    I want even our kids to taste the barfi.But the one get in stores will not be tasty and its not good for health because of it's quality.We can easily prepare kobbari mittai at home with less ingredients within 10 minutes.
INGREDIENTS are so simple
  • Grated coconut-1 cup
  • Sugar-1 cup
  • Elachi-2 to3
  • Water-1/2 cup
  • Food colour(optional)
PROCEDURE
  • In a pan take 1 cup of sugar and add 1/2 cup of water and stir well
  • After 5-6 minutes check it for consistency
  • To check it,take a bowl with water and add a drop of sugar liquid into it.If it immediately forms as a ball inside the water,it is perfect for further processing
  • Now add the grated coconut,elachi and  a pinch of food colour to it and stir for 3 minutes
  • Take a plate and apply ghee on it
  • Now take the already prepared mixture into it and cut into slices of required shape and size

LAMB HEAD CURRY/MUTTON THALA CURRY

INGREDIENTS
  1. MUTTON THALA/HEAD PIECES-1/2 KG
  2. Chopped onion-1 (medium sized)
  3. Ginger-1 1/2 inch
  4. Cardamom-1 inch
  5. Cloves-9 to 10
  6. Coriander leaves
  7. Coconut paste(finely grinded raw coconut)-1/2 cup
  8. Mutton masala powder(OPTIONAL)-1/2 tea spoon
  9. Coriander Powder-1 tea spoon
  10. Turmeric powder-1/4 tea spoon
  11. Chilli powder-1 tea spoon
  12. Garlic-1
 PROCEDURE
  • In a pan lightly fry the onions and keep it aside
  • Now take fried onions,garlic,ginger,cardamom,cloves,turmeric powder,chilli powder,Coriander powder in mixer and grind them well
  • In a pan take some oil and fry the paste for 5 minutes
  • Add 2 to 3 glasses of water to the paste
  • Now put the mutton pieces,salt,turmeric powder in cooker and boil it until you get 3 whistles
  • Now add the boiled mutton pieces to the above prepared masala
  • Filter the coconut paste and add only coconut milk to the masala
  • Finally add coriander leaves and mutton masala powder and mix well
  • Mutton masala powder is an optional.Curry can be prepared without this also
Spicy LAMB HEAD CURY/MUTTON THALA CURRY is now ready.It can be best served with idli.

ANDHRA STYLE GUTTHI VANKAYA

Good evening everyone.Today I would like to test your General knowledge.So here is question for you all.Which is called as KING OF INDIAN VEGETABLES?
It's very simple question right?I know you all guessed your answer correct,it's BRINJAL.It is called VANKAYA in Telugu and Bengan in Hindi.So let's prepare the king's dish today,ANDHRA STYLE GUTTHI VANKAYA.I know your mouth is watering now.Let's not waste time and go into ingredients first.
INGREDIENTS
  1. Brinjal-1/2 kg
  2. Onion-1(big sized)
  3. Garlic-1(full)
  4. Cloves-6-7
  5. Coriander leaves
  6. Tomato-small
  7. Coconut-a small piece
  8.  Fried ground nuts-3 tea spoons
  9. White sesame seeds-1 tea spoons
  10. Tamarind-lemon sized
  11. Salt
  12. Oil
  13. Coriander powder-1/2 tea spoon
  14. Chilli powder-1 tea spoon
  15. Turmeric-1/4 tea spoon
PROCEDURE
1.In a mixer jar put chopped onions,garlic,cloves,coconut,fried ground nuts,sesame seeds,coriander powder,turmeric powder and grind well
2.Now cut the brinjals into  4 parts and stuff it with the above paste
3.Fry these stuffed brinjals in oil and add tomato slices,salt.
4.Fry it until the colour change
5.Pour 1 1/2 to 2 glasses of water and cover it with alid and boil
6.After boiling the brinjals well at last add coriander leaves and tamarind juice and mix well
    This curry will be semi gravy and can be better served with white rice.

CHICKEN LIVER FRY

Hi friends,I know you all are bored of eating  chicken and vegetables.So today I'll teach you to prepare LIVER FRY.This is a very simple dish and can be prepared within 15 minutes.So,let's start preparing it.It needs very few ingredients to prepare
INGREDIENTS
1.Chicken liver 1/4 kg
2.Salt to taste
3.Chilli powder-1 tea spoon
4.Onion-1 small
5.Gingr garlic paste-1 tea spoon
6.Curry leaves
7.Coriander leaves
8.Pepper-3/4 tea spoon
9.OIl 3 to 4 tea spoons
10.Turmeric powder-1 pinch
11WAter
PROCEDURE
1.In a pan,take 3-4 tea spoons of oil and add chopped onion,ginger garlic paste and curry leaves and fry well
2.Add liver pieces and fry well
3.Now put some salt,a pinch of turmeric powder,chilli powder and mix well
4.Now pour 2 glasses of water and let the mixture boil for sometime
5.After all the water gets dried add pepper powder and coriander leaves, immediately turn off the gas stove.
6.The mixture should not be fried after adding pepper because it turns the liver fry into black colour.
Now the tasty spicy CHICKEN LIVER FRY is ready to serve hot.

CHICKEN GREEN MASALA

Hi friends,I am back after a long time.I was busy with some work because of which I was unable to post any updates.Now on we will continue with our cooking tutorials.
Today I will help you learn a Chicken item.That is CHICKEN GREEN MASALA.It's a semi gravy dish with a good flavor of mint and coriander leaves.Going into ingredients
INGREDIENTS
Chicken-1/2 kg
Salt
Onion-1 big sized
Green chillies-6
Jeera-1/2 tea spoon
Black pepper powder-1/2
Cinnamon-2 pieces
Cloves-8 to 9
Coriander leaves
Coriander powder-1 tea spoon
Mint Leaves
Turmeric Powder-1 pinch
PROCEDURE
1.Grind chopped onion,green chillies,Jeera,cinnamon,cloves,coriander powder, black pepper powder well
2.In a pressure cooker,put some oil and fry the paste for 2 minutes.
3.Add chicken pieces,salt,turmeric powder,mint leaves and fry well
4.After frying for 5 minutes, add 1 to 1 1/2 glass of water
5.Close the cooker with lid and boil until you get 3 whistles
6.After the pressure get released,open the lid and fry again for 2-3 minutes.
7.Take the dish into a bowl and serve with white rice.
Tasty spicy mint flavored CHICKEN GREEN MASALA is ready to serve.
