TANDOORI LEG PIECES WITHOUT OVEN

TANDOORI CHICKEN is a very famous five star hotel recipe.It's origin is from PUNJAB.The main
ingredient of tandoori chicken ishung curd.Hung curd is nothing but yogurt drained of all its water. It can be made very easily at home. Tie some curd in a muslin cloth and leave it hanging for at least 3-4 hours or till all the water drains out. After this time period, pressure is applied to the bundle to squeeze out all the water and the hung curd is ready.Now getting into preparation of tandoori chicken...
INGREDIENTS
       1.Chicken -1/2 kg
2.Salt
3. Chilli powder-1 ½ tsp
4. Garam masal-1/2 tsp
5. Chat masala-1/2 tsp
6.Kasuri methi-pinch
7.Ginger garlic paste-1 ½ tsp
8.Hung curd-1cup
9.Food colour-red
10.Oil
11.Butter-2tsp
PROCESS
·         Take the chicken leg pieces in a big bowl
·         To the chicken add salt, chilli powder, garam masala, chat masala,kasuri methi, ginger garlic paste,hungcurd,food colour and butter
·         Mix all the items well so that the masala gets applied to the pieces
·         Leave the chicken for 2 hours for marination
·         We can fry the marinated pieces in oven for 40 minutes in grill mode
·         Donot worry if you don’t have a oven at home
·         You can shallow fry the chicken on a pan with little oil
·         If you want to deep fry the pieces,while marinating the chiecken add 1 tsp basin so that the masala gets binded well




NORTH INDIAN SPECIAL MAVA MALKOVA

Hi everyone.Happy Tamil New Year.in Tamil it is called Puthandu.Tamil people celebrate Tamil new year on 14 April. This is the month of Chitterai, the first month of the Tamil solar calendar. On the eve of Puthandu, a tray arranged with three fruits (mango,banana and jack fruit), betel leaves and arecanut, gold/silver jewellery, coins/money, flowers and a mirror is placed.On this special day I want to teach you a sweet item called Mava Malkova.It's origin is from North India but it is commonly prepared in many parts of South India too.
INGREDIENTS
                               Maida-1cup
                               sugar-1 ½ cup
S                                   Kova-1 cup
                                     Milk-1cup
                                     Elachi powder
                                     Badam

PROCESS
·         Take maida,elachi.milk and kova in a mixer jar and grind well
·         The batter must be like the one prepared for jilabi
·         The batter must not be too much liquid
·         Take sugar in a pan and add water
·         The consistency must be like jamun sheera
·         Take a wide open pan and put oil into it
·         Take a medium sized deep spoon and take the batter into it
·         Slowly leave the batter into the pan in medium flame
·         The malkova must be fried until it changes to brown colour
·         The malkova can now be dipped in sugar syrup

·         Slowly transfer them into a plate and garnish with chopped badam

MUSHROOM MASALA

MUSHROOM MASALA

INGREDIENTS
1.       Mushroom-200 gm
2.       Onion-1 big
3.       Garlic-1 knob (small)
4.       Ginger-1 inch
5.       Tomato-2 medium
6.       Cinnamon-1 inch
7.       Cloves-8 to9
8.       oil
9.       coriander powder-1 ½ tspn
10.   chilli powder-1 tspn
11.   turmeric powder-1/2 tspn
12.   garam masla-1/2 tspn
13.   salt
PROCESS
·         Take a pan and add 2 tspn of oil and fry washed mushrooms, salt and turmeric for 5 minutes
·         Keep this aside
·         Now grind onions,tomatoes,ginger,garlic,cinnamon,cloves well to make a paste
·         In a pan take some oil and fry the paste until the rawness decreases
·         Now add coriander powder, chilli powder, and fry well
·         Add 1 glass of water and let it boil for some time
·         Now add the fried mushrooms and boil for 5 to 7 minutes
·         Finally add gram masala and  chopped coriander and off the stove


 This mushroom masala will taste better with parota or naan.In my next coming posts I will give you all the naan recipe too.

RAYALASEEMA SPECIAL GROUND NUT CHUTNEY

RAYALASEEMA SPECIAL GROUND NUT CHUTNEY
INGREDIENTS
1. Ground nuts-1 cup medium sized
 2. Green chilli-4 to5
3. Ginger
4. Garlic-1 clove
5. Tamarind-lemon sized
6. Onions-1medium sized
7.    Coriander
8. salt
PROCESS
·         Take 1tspn oil in a pan and fry ground nuts and green chillies
·         In a mixer jar take fried ground nuts,chillies,ginger,salt,garlic,tamarind and grind
·         Now add onions, coriander and inch
·         Remember add only a small bit of ginger

*TO have this chutney with rice take lemon sized tamarind but to have it with chapatti take only ½ of it.Also green chillies must be only 3

ALOO CUTLET

ALOO CUTLET (Shallow fry)
INGREDIENTS
1.       Boiled aloo(potatoes)-1/4kg
2.       Green chilli-4to5
3.       Coriander
4.       Salt
5.       Pepper powder-1/2tspn
6.       Green peas
7.       Corn flour-5tspn
8.       Maida-2tspn
PROCESS
·         Boil the potatoes and green peas until soft
·         Peel the potatoes and grate it
·         Smash grated aloo and green peas
·         Add chopped green chillies, chopped coriander, pepper powder, corn flour and mix well
·         Take some paste and make small balls
·         Press them gently with hand to make a small round like puri
·         Gently pat the cutlets in Maida
·         Now take some oil in pan and fry the cutlets. Here I did shallow fry ,you can even deep fry them
·         But shallow fry gives more taste
